Reverse sunflower mushrooms

Sometimes a simple supper is all that you need, and all that you have the inclination to make.

Last night I found myself staring into the depths of my huge double door fridge that always looks empty even when it is full, desperately searching for something to make a light dinner out of. On the third shelf I saw a punnet of large mushrooms and a box of free range eggs. On the shelf above was a packet of ready grated gruyére cheese. I stared glassy eyed at them for a moment while tiredly thinking of what I could do with them that required minimal effort.

I decided on sunflower mushrooms so named as they look like a sunflower in reverse with their yellow eggy centre and black mushroom petals.

  • Large mushrooms, wiped and their stalks removed
  • One egg yolk per mushroom
  • A good handful of grated gruyére per mushroom
  • Sea salt and freshly ground pepper
  • A wine glass of water
  1. Put the cleaned mushrooms in a hot pan and pour the water around them. The water will boil rapidly and quickly steam the mushrooms.
  2. When the liquid has evaporated from the pan gently lift the mushrooms (using tongs) to drain any excess liquid that may have gathered on the top.
  3. Place the egg yolk in the hole where the stalk was and then scatter the cheese over the top.
  4. Season with salt and pepper.
  5. Place under a hot grill until the cheese bubbles and the yolk is cooked but still runny.
  6. Eat.
